KETO SWEET ABD SOUR PORK

My Sweet and Sour Pork recipe is one of my three favourite takeout style recipes. It is 100% Keto friendly and there's no delivery charge. That is, unless you want to tip the chef!

INGREDIENTS

2-3 small boneless chicken breasts
1/2 cup of butter
2 Tbsp Sesame oil
2 large eggs, beaten
1 cup crushed pork rinds (use a food processor)
1/4 cup coconut flour
Salt and Pepper to taste

Sweet & Sour Sauce

1/2 cup Monk fruit Sugar
1/2 cup rice vinegar
4 Tbsp No sugar added Ketchup
1 Tbsp soy sauce
1 Tsp garlic powder
Heat the sauce ingredients, whisk and reminisce of your favourite Chinese buffet

INSTRUCTIONS

NOTE: You may have to do steps 5 through 8 in a few batches

  1. Cube chicken into 1 inch pieces.
  2. Beat the eggs in a bowl.
  3. Place the crushed pork rinds, coconut flour, salt, and pepper into a plastic zip bag
  4. Heat the butter and oil in a wok style deep pan over medium high heat. You don’t want to burn the butter
  5. Toss a few chicken cubes 6-8 into the egg
  6. Then into the zip bag and shake
  7. Place in hot oil for 3-4 minutes then flip
  8. Remove onto a plate or bowl and repeat for remaining cubes
  9. Slather with the sauce and comment with praise and photos
